It is produced exclusively from 100% fresh Greek goat's and sheep's milk, coming from freely grazing animals whose nutrition is based solely on the flora of the grazing land of our region. It is matured in containers with brine for at least a period of 3 months. While completing the maturation process, a slightly acid taste with rich aroma is given.
