It is semi hard cheese made with artisrty and fresh cow's milk. It is traditionally produced, it matures on wooden shelves for at least three months as to acquire its distinctive sweet and full of aromas flavor. It is available in two sizes: Head wheel (7 kilos) and loaf (2,7 kilos).
